Buttermilk Apple Cake

 

INGREDIENTS:

½ cup (125 ml) brown sugar, or sugar substitute

2 cups (500 ml) buttermilk

1 cup (250 ml) brown rice flour

1 cup (250 ml) Inari coconut flour

1 tsp (5 ml) baking powder

1 tsp (5 ml) baking soda

1 tsp (5 ml) cinnamon

½ tsp (2ml) salt

2 medium apples, cored and finely chopped

 

PREPARATION:

Lightly grease and flour a 2 L (8 inch) square baking or Bundt pan. In a large bowl, beat together the sugar and buttermilk. Combine flour, baking powder, baking soda, cinnamon, and salt. Add, with apples, to wet ingredients; mix until combined. Spread batter evenly in the pan. Bake in an oven preheated to 180ºC (350ºF) for 40 to 45 minutes. Cool in the pan before removing and cutting into 12 servings.
