Coconut Macaroon Cookies, 24 cookies

 

½ cup butter

1 cup Inari Organic Coconut or Golden Cane Sugar

4 eggs

½ teaspoon NOW Org vanilla exract

½ cup Inari Organic Sifted Coconut Flour

2 cups Inari Organic Grated Coconut

 

Directions:

Mix together butter, sugar, eggs, and vanilla. Stir in coconut flour and coconut. Drop spoon-size mounds 1-inch apart on a greased cookie sheet. Bake at 350 degrees F (190 C) for 15-17 minutes or until golden brown. Remove from cookie sheet immediately and cool on wire rack.
