Easy-To-Make Maple-Glazed Trail Mix, 6 servings

 

2 Tbsp (30mL) coconut oil

½ cup Inari walnuts

½ cup Inari almonds

¼ cup Inari pumpkin seeds

¼ cup maple syrup (or Agave)

½ tsp cinnamon

1/3 cup Inari grated coconut

1/3 cup Inari cranberries

1/3 cup Inari Sultana or Thompson raisons

1/3 cup Inari Dates, remove pits and finely chop

 

Directions:

In skillet, melt coconut oil over medium heat. Add almonds and pumpkin seeds and cook for 3 minutes, stirring regularly. Add maple syrup, cinnamon, and walnuts to skillet and continue to cook for 2 to 3 minuets. Toss in coconut and stir well. Remove from heat and place in bowl to cool. Stir in cherries or other dried fruits as well as prunes. Mix well.
