Hearty Fruit and Field Harvest Salad
2 cups Inari Heritage Grains and Pulses International Mix (unprepared)
3 tablespoons cider vinegar
1 tablespoon lemon juice
3 tablespoons light oil (safflower or canola)
½ teaspoon fine grind sea salt
1 cup dried cranberries (sweetened)
½ cup minced chives or green onion
6-7 mint leaves (or 1 – 2 tsp dried mint)
3 plums (red or purple)
1 tart green apple
PREPARATION:
Cook Heritage Grains and Pulses International Mix as per package directions. Drain off any excess liquid, place in a large bowl and stir to release heat. Add additional ingredients (except fresh fruits), stir well and refrigerate (will store for up to 3 days in the refrigerator). Dice plums and apple and add blend with salad mix, just prior to serving.
