Vegetarian Chili

 

1 large can whole tomatoes with juice

1½ cup cooked chickpeas

1½ cup cooked kidney beans

1 to 2 onions

2 to 3 sweet peppers (green, red or yellow)

½ to 1/3 cup chili powder

1 tsp chili pepper flakes

Salt & pepper to taste

Tomato paste if needed for thickening

Ground pork (optional)

 

Directions:

Sauté onion and peppers (and meat if using, once meat is cooked add…) for 3 to 4 minutes, add all other ingredients and let simmer on very low heat for 2 hours. Stir and taste every once in a while and adjust seasonings as needed. Also add tomato paste after 1 hour if too liquidy.
